Masala Egg Bhurji Recipe

Eggs are my favourite and I love every recipe with eggs in it. Not only eggs are super tasty to eat, they are best and inexpensive form of protein too. I have already shared my simple egg bhurji recipe for beginners here. But today I am sharing how can you prepare lip smacking masala egg bhurji very easily too. I am more a fan of masala egg bhurji because it taste even more delicious. So here is my recipe again with simplest of ingredients.


Eggs – 4

Onions – 2

Tomato – 1 or 2

Ginger – 1/2 inch (depends on your preference)

Garlic – 8 to 10 cloves

Coriander powder – 1 tbsp

Turmeric powder – 1/4 tbsp

Red chilli powder – 1 tbsp

Salt – to taste

Oil- 4 tbsp (according to preference)

Coriander – Chopped for garnishing

(tbsp refers to tablespoon)

1. Cut onions and tomato into small pieces and crush ginger and garlic together. You can also use ginger garlic paste.

2. Take some oil in a kadahi and heat it a little. Add onions to it and saute them till they become translucent.

3. Add crushed garlic and ginger to it and saute it with onions again nicely. See that onions together with ginger and garlic are fried properly.

4. Add tomatoes in the end and again cook till tomatoes are cooked.

5. Now add coriander powder, turmeric powder and red chilli powder to this paste.

6. Let the masala cook on low flame till oil oozes out from sides.

7. Whisk 4 eggs in a bowl and add it to this mixture.

8. Add salt to it. Saute properly so that all the masalas are blended nicely and let it cook for 5 more minutes.

9. Switch off the flame and garnish it with loads of chopped coriander.

10. Your masala egg bhurji is ready. I prepare this way and it comes out super tasty. You can even add butter to it for more flavour.
